Albania - TAVE KOSI

January 2nd, 2011. Day two of the adventure: Tave Kosi from Albania.  A very rich leg-of-lamb stew, which bakes in a yogurt sauce. When it is done, the thick sauce hardens similarly to a souffle. Yummy. We ate it with a greens-and-beet salad and bread.

The recipe is from gourmed.com

This is the Tave Kosi after we fluffed the "souflee" topping.

The cook and the Tave Kosi.
Wondering where Albania is?

Albania is a relatively small country NW of Greece, on the Adriatic See coast. If one were to swim west long enough, one would get to Italy.
